Since I started planting bell pepper seeds (May 2019), I wanted to do something more out of that. I like spicy food so I thought, why not starting making hot sauces for me and my friends to enjoy? I am craving this idea so much that after my final exams on June, I decided to buy habanero and jalapeño seeds on amazon.
2 weeks later or so, they came through our mail. I was friking excited and I basically invaded every sunny space of my apartment with pots. I can’t describe how happy I was when one of my first seedlings just popped and made its way out of the soil. MY LITTLE BABY! As I was planting more and more pepper seeds, I started doing some research on how to make spicy sauces and all that comes with it like food safety (VERY IMPORTANT), ph of the sauce, whatever you can imagine. (MAKE SURE YOU GET EVERYTHING RIGHT, YOU DON’T WANT TO MESS AROUND WITH THAT because you can end up in a grave, literally).
Two or three weeks ago from now, December 29th, after sterilising pots, cutlery, lids and more, I cut different veggies, put them in a sterilised jar and poured brine and a bit of lemon so the ph of the sauce is low and safe for everyone.
At the moment, it is fermenting. I am so happy because the last time I tried something like this, it was a total failure.
Actually….. just checked and… even though it is fermenting very well, I believe it is not good enough fermentation because of the looks of it. It has a lot of kahm yeast.
I don’t know what to do. Seems like fermenting isn’t my thing but, I want to try again and learn from my mistakes.
